On February 7, 2019 at 8.30 p.m., Food Technology Program, Faculty of Technology together with Food Science and Technology Association of Thailand (FoSTAT) organized the 11th Food Innovation Contest (Northeast region) at Faculty of Technology, Khon Kaen University. Participants of this contest consisted of 7 teams coming from 4 institutes – Khon Kaen University, Kasetsart University Chalermphrakiat Sakonnakhon Province Campus, Nakhon Phanom University, and Ubon Ratchathani University.
The contest was aimed to improve ability of people who would like to engage in food industry in the Northeast region. The winner team can participate in the final round of Food Innovation Contest at Food Innovation Asia Conference 2019 which is going to be held on June 14, 2019 at Bangkok International Trade and Exhibition Centre (BITEC).
Assoc. Prof. Dr. Pornthap Thanonkeo, Dean of Faculty of Technology, said it was an honor that Khon Kaen University had been the host of Food Innovation Contest for the 2nd time. It was a great opportunity for students in the Northeast region to show their academic potential, especially development of product innovation that could be utilized in the future. The products in the future needed to meet with the demand of consumers in new age shifting to aged society, which might have effects on food business. On that day, there were entrepreneurs coming to observed so that they could further develop some ideas from students’ work selected by the committee for their business.
The three teams who were the first-prize winners consisted of Doozy from Kasetsart University Chalermphrakiat Sakonnakhon Province Campus producing biscuit from green rice grain; Fuengfa Si It (literally means brick-colored Bougainvillea) from Khon Kaen University producing Cracker Mixed Fiber; and Bright from Khon Kaen University producing My Boo or roasted glutinous rice without bamboo package. All the 3 teams will be the Northeast region’s representatives attending Food Innovation Asia Conference 2019 at BITEC on June 14, 2019
Miss Kawinnat Srisamran, a member of Fuengfa Si It and a student from Faculty of Technology in KKU, said her team had developed a product called Mixed Fiber Cracker by applying knowledge that they had been studying for 3 years. Mixed Fiber Cracker was made from banana stalk and unripe banana, which replaced wheat. This recipe gave gluten- free and high fiber batter. Moreover, banana stalk and unripe banana were much cheaper that wheat, so it could be an alternative choice for consumers. The contest gave them a great chance to apply their knowledge to food product development and enabled them to obtain more experience.
Food industry is one of major industries in Thailand, and it has been supported by the government under Thailand 4.0 policy. In fact, food industry plays a major role in nation development in terms of both economy and society. It also adds value for agricultural products and creates jobs for people in the country as well as hundreds billion baht of income each year. Because of the shift in situations in this world, advancement in technology and consumers’ demand have changed over time. Therefore, this contest is a way leading to innovation for food development which can be beneficial to the country in the future.
